Pork with simple Ratatouille |

Shoulder of pork is called “magra” in Spanish. 1 kilo cut in cubes will be enough for 4 people. In the usual large pan fry the pork in olive oil until reasonably brown.
Add 1 deseeded red pepper cut in chunks, the same with a green pepper, one onion roughly chopped, one courgette in thick slices, 2 cloves of garlic (optional), a small carton of tomato puree, a glass of white wine, salt and pepper. Stir well. Cover with a lid and simmer for about half-hour. Check seasoning. If too thick add a little more wine. Water is too scarce in our country to waste it on cooking. |
