For 10 balls  

A kilo of various white fish fillets without skin and bones

I onion roughly chopped

6 tablespoons of sunflower oil

2 teaspoons each of sugar and salt plus a pinch of pepper

2 large eggs.

I tablespoon of ground almonds

3 tablespoons of Matzo meal. Now this is not easy to find so I use brown breadcrumbs. It is really just a binder

The traditional way to do it is tiresome. Just put everything in the food processor. If it looks too sloppy add more Matzo or breadcrumbs.

Shape into small balls. At this stage you can freeze them. Individually. Lay them on an oiled tray and freeze. Then put them in a plastic bag.

Serve them fried or poached with a sweet and sour tomato sauce.
